I’ve done this and it’s why I always use my shears now.

They’ll still turn if you give them time. I pick mine green at the end of the season when threat of frost is approaching and they always turn and they still taste great. Or, like someone else said, just enjoy them fried and green!

Nothing wrong with that. They will turn red inside.
You can pick them sooner, at breaker stage.
It’s a myth that you have to let them reach mature color on the vine to optimize flavor and nutrition.
You may want to prune some of that foliage so you can get more airflow and prevent disease. I just pruned mine yesterday and found wayyyy more tomatoes in hiding.

They say it’s better to pick early and wait for them to ripen on a sunny ledge than on the plant, the redness attracts birds to them and they peck at them, so you actually did good!
