if you have never had chimy churi potatoes like that it’s okay because you don’t even know what you’ve been missing out these simply melt in your mouth and the Chim churi is so aromatic start by washing and cutting your potatoes lent twice boil them in salted water once fork tender sear them in olive oil with salt pepper paprika and garlic powder toss them until the edges get crispy to make the Chim chury add all the ingredients from the caption below into a food processor and give it a blitz once the sauce is ready pour it over and enjoy

If you have never had Chimichurri Fingerling Potatoes it’s ok because you don’t know what you are missing on but once you do you’d want them over and over again!
Ingredients:
2 lbs fingering potatoes
1/4 cup olive oil
1 tsp salt + 1 tsp to salt the water
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp smoky Chili flakes, optional
Chimichurri Sauce:
1/2 cup parsley
1/2 cup cilantro
1/2 jalapeño
1/3 cup olive oil
3 garlic cloves
2 tbs red wine vinegar
2 tbs honey
1/2 lemon, juiced
1 tsp salt
1 tsp oregano
Instructions:
1. Wash and cut potatoes lengthwise; boil potatoes in salted water until fork tender, about 40 mins;
2. To make the chimichurri, add all ingredients above to a food processor and give it a blitz;
3. Once potatoes have boiled; sear them in olive oil, salt, pepper, garlic powder and paprika as you tossed them until edges are caramelized;
4. Pour the chimichurri over and toss again; reserve some extra sauce for dipping and enjoy!
