Hello friends, I’m Valentina! Glad you’re here cooking with me! This the first recipe from my Breakfast Series next recipe videos will be out next week (Wednesday 31st and Friday 2nd) This Oat Pancake is a perfect recipe if you don’t like oatmeal but look for a healthy breakfast recipe These Pancakes are gluten free, without refined sugar and without butter but they are still incredibly soft, fluffy and delicious! I’m finely grinding my old fashioned rolled oats I’ve been making this recipe for breakfast for long time and I noticed that every type of oats absorb more or less liquid so feel free to add a splash of more milk/water to your pancake batter if turns out too thick I’m mixing the dry ingredients together: grinded oats, baking powder, baking soda and salt I’m mixing the wet ingredients, starting adding the egg to my homemade buttermilk (milk+vinegar) Now I’m adding maple syrup instead of refined sugar: you can skip it or use honey instead I’m using vegetable oil, but you can skip it for a low calories recipe Now I’m adding the wet ingredients into the dry ones and I also add Vanilla for a delicious flavor You should get a thick but still medium fluid consistency Preheat your pan over medium-low heat for 3-5 minutes before cooking pancakes You can see the batter is a bit thick but not too much, you can easily pour it from your 1/3 cup using a tsp Cook over low-medium heat and be careful no to overcook or they turn out less fluffy! With this recipe you’ll get about 7 pancakes you can easily store in freezer and defrost your pancake every moring to have a healthy recipe ready in 1 minute! I’m topping them with maple syrup, but you can serve with fresh fruit if you prefer See you next week for other delicious breakfast recipes, don’t miss them! They will be out on Wednesday and Friday! Don’t forget to leave me a comment and a thumbs up if you like this recipe 🙂
