this recipe for absolutely the best shrimp scampi was submitted by Allrecipes member cat who describes it as melt-in-your-mouth good another member raves I’ve ordered shrimp scampi in restaurants and have also made it myself several times but this recipe by far beats them all this recipe moves quickly so it’s best to have everything ready to go before cooking start by peeling and mincing four cloves of garlic what’s a shrimp scampi without all that fresh flavor peel and chop one shallot mints half a cup of fresh parsley set it all aside for now and you’ll move on to getting the shrimp ready you’ll need one and a half pounds of fresh shrimp shelled and deveined without the tails you can use frozen shrimp of course since it’s so readily available just make sure it’s properly thought ahead of time this recipe calls for a seasoned flour mixture for dredging the shrimp it has a nice coating that soaks up all the flavors of the dish in a shallow bowl add half a cup of flour 1/4 teaspoon of salt 1/2 teaspoon of freshly ground black pepper 1/4 teaspoon of cayenne pepper for a touch of spice mix it all together dredge the shrimp in the seasoned flour you and rest them on a rack to let excess flour fall through place half a cup of olive oil in a large skillet over medium heat when the oil is hot add the shrimp saute them for about five minutes tossing them often so that they’ll cook evenly transfer the shrimp with a slotted spoon to an ovenproof serving dish leaving the oil in the pan next lower the heat to medium-low add the garlic shallot parsley and half a teaspoon of crushed dried oregano to the pan saute the ingredients for three minutes stirring constantly spoon the mixture over the shrimp now pre-heat your broiler return the pan to the heat and pour 2 tablespoons of white wine into the pan and 2 tablespoons of brandy remove the pan from the heat using a long match or a lighter ignite the mixture to burn off the alcohol return the pan back to the heat to cook until the flames die down when there are no more flames scrape the bottom of the pan with a wooden spoon or silicone spatula to loosen up any brown bits there’s a lot of flavor in there and you don’t want to lose any of it pour the sauce over the shrimp and place the serving dish under the broiler for about 2 minutes remove it from the oven and serve immediately it should be sizzling with just a touch of carmelization to bring out the sweetness in the shrimp garnish with a squeeze of lemon to perk up the flavors a bit another Allrecipes member suggest serving the scampi on a bed of angel hair pasta tossed with some olive oil and lemon zest and of course some crusty bread will always come in handy to soak up the garlicky sauce

Why would you want to dredge the shrimp in flour? Totally unnecessary & hardly authentic, just adding cabs for no good reason.

Wow some of you guys on here so are ungrateful, Someone takes the time out to make a nice video on Shrimp Scampi and you guys complain? If you don't have nothing nice to say, Please just keep your mouth shut and move on to another Recipe, It's that simple.
Have any of you wonderful critics tried out the Recipe before you complained about it? I bet not. The Cheescake Factory makes them in this manner and they are amazing. Please try it before you give such degrading comments, Lets behave a little more kind in this world, So many rude people and ungrateful people it's a shame.

This is how you should 'not' make shrimp scampi. Just sear them off on a hot pan with olive oil and garlic until it develops good colour and flavour, and deglaze the pan with white wine once they are perfectly seared off on both sides. Then add butter and lemon juice, some pepper and parsley goes in. Taste the sauce, and add more salt if you think it needs more salt. This is much easier, and the flavour will be whole lot more intense.
Wonderful recipe! I tweaked a bit and just used what I had..but the flour and parsley was the to die for!! My husband couldn't get enough
Looks good but WOW…I just wanted a little side dish! I guess just a little butter, spices, garlic…etc…will do me fine tonight. Maybe another night when I have more time I'll try this…Then again…Maybe Not!
Enjoyed watching this, even though i have no intention whatsoever of attempting to make it; while watching I enjoyed a half decent bag of supermarket frozen scampi and some 'thick cut' oven chips along with a can of cut price brand peas. Yum ! and the experience of watching this vid at the same time as eating my cheapo meal fairly enhanced it's flavour. A bit like 'culinary pornography' I suppose.

OK, this is the WORST shrimp scampi recipe I've ever tried, and it really sucks for me because shrimp is like twice as pricey here in Germany than the US. This recipe is way too greasy, and the shrimp end up being too overcooked. I have that horrible overcooked garlicy heartburn feeling in my chest, and I usually love garlic. I usually follow a different youtube recipe for shrimp scampi, that I didn't use this time because I thought I could kick it up a notch and learn something… No. This is over complicated, bland, greasy and just plain nasty.

gheez so more many different ways with white wine, without. Also cooking the shrimp and then removing shrimp to a different plate rather than cooking everything in the pan.
it just seems like you are more focused on the shrimp then anything else. Like what about the noodles……or scampi is the shrimp by itself?

Shrimp scampi? Debatable. The best? Not by a long shot……
What with browning the breading and then the broiling, it seems like the shrimp would be overcooked and tough.
Just a suggestion if you want to really give it some flavor substitute the PARSLEY for CILANTRO. The flavors from the lemon and garlic give it a flavor boost as parsley is some what bland
