Used up any leftover veggies in the house, roasted them with a full garlic, sundried tomatoes and roasted peppers in some of their oil. I boiled a big bag of frozen veggies, added plenty of spice, seasoning, and a big spoon of vegan butter. It's my favourite soup I've made. 🥹🫶 So silky and smooth, packed with flavour! 🫣👌 Can't wait to dip a cheeze toastie in some! 😋
