I'm a fan of pretty much everything Marutai makes, but I feel like their Saga Shio is one of the more underappreciated varieties.
The wife went to a concert tonight, so I threw this Marutai bowl together as a treat for myself with a reverse seared NY strip steak, narutomaki, Momoya menma, Ramen Bae enoki mushrooms, an egg (that I wish I'd had the forethought to marinate earlier), scallions, and chili thread. I also added a couple pieces of caramelized garlic and drippings from the steak sear for some extra flavor and fattiness.
Pretty damn outstanding if I say so myself! Marutai’s broth is beefy and savory and really took well to all the ingredients. If you’ve never had this variety before and love a good beef broth, it's worth seeking out.
