Keto Cheesecake (Gluten free and sugar free)

Fills a 9inch springform

Crust:
1c almond flour
2 tbsp sweetener (I use Monk Zero(Monkfruit/erythritol blend exclusively but recently tried the Lakanto Monkfruit/Allulose and it was just as good if not better )
1/2tsp cinnamon
Pinch of salt

Cheesecake:
6 blocks of cream cheese
6 eggs
3/4 – 1 cup of Monk Zero or 1 – 1 1/3 cup of Lakanto
1 tsp of salt
Generous amount of Mexican vanilla ( I season with my heart, probably about 2-3 tbsp)

1- 2 cups of Lily's semi-sweet or dark chocolate chips

Bake 325 for about 1.5 hours. Add a sheet pan of water on a rack beneath.

Topping:
1 TBSP sweetener (see above)
2 tsp cinnamon
Pinch of Salt

Blend together and sprinkle across the top of your cheesecake when you take it out of the oven use a torch or oven broiler for about 2min to carmelize the sugars.
