Ingredients:
4 large russet potatoes
1 cup shredded sharp cheddar cheese
4 slices of bacon, cooked and crumbled
2 tablespoons olive oil
Salt and pepper to taste
1/2 cup sour cream (optional)
2 green onions, chopped (optional)
Instructions:
Prepare the Potatoes: Preheat the oven to 400°F (200°C). Scrub the potatoes clean and poke several holes in each with a fork. Bake directly on the oven rack for 45-60 minutes, or until tender.
Cool and Scoop: Allow the potatoes to cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato on the skin. Save the scooped-out potato for another use (like mashed potatoes).
Season and Bake: Brush the potato skins with olive oil on both sides and season with salt and pepper. Place them skin-side down on a baking sheet. Bake for 10 minutes, then flip and bake for another 10 minutes until crispy.
Add Toppings: Remove the potato skins from the oven and sprinkle the insides with shredded cheddar cheese and crumbled bacon. Return to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
Serve: Remove from the oven and let cool slightly. Top with sour cream and green onions if desired. Serve immediately.
