Look away now if you don't like onion. Super easy and great as a side to add with your favourite type of protein or so yummy just by itself.

600g thinly sliced onions
8 eggs
Butter
Salt and pepper
A few bay leaves
Oil

Cook your onions on low with a mix of butter and oil for minimum of 30 minutes continuously stirring with a lid. Add your bay leaves and salt and pepper.
Whisk your eggs and let your caramelised onion slightly cool before adding your eggs.
Place in a square or loaf tin lined with baking paper and cook for 30 minutes at 180⁰

    This looks brilliant. I like caramelizing onions in bulk, but never thought to incorporate eggs. Seems like a versatile option, thanks.

    Maybe now my wife will not faint at the sight of mounds of onions 🙂
