This festive, healthy and delicious Spiced Rice Pudding Parfait is so warm and cozy, it’s the perfect dessert for the holiday season 🌲⭐️

I love that you can make it with leftover rice and just a few simple ingredients and then make it fancy with just a few more. It’s quickly becoming one of my favorites.

You need:
🍚 2 cups cooked rice
🥛 2 cups plant milk
🍁 Quarter cup, maple syrup
🍂 One cinnamon stick
⭐️ One star anise
✨ 2 teaspoons corn starch
✨1 teaspoon vanilla

🥄 Mix all the ingredients (except the vanilla) in a saucepan and cook over medium heat until the rice absorbs most of the liquid.
🥄 once complete, removed from the heat, add vanilla and then decant to a heat proof bowl and allow to cool
🥄 refrigerate for a couple of hours or overnight.

Toppings:
2 tbs plant butter
1 cup walnuts
1/2 Bosc pear
2 tbs maple syrup
Optional: pomegranate arils

✨ Add 2 tbs plant-based butter to a frying pan. Once melted add one cup of walnuts.
✨ coat, the walnuts, and then drizzle with maple syrup until your walnuts or sizzling remove from the heat and set aside.
✨ in the pan add sliced pears, cook until golden. Drizzle with maple syrup and remove from the heat.
✨ all the components are ready you can assemble your parfait start with the rice pudding, add, walnuts, pears, and pomegranate arils if you like. ❤️
