K all I give up. 3 kg dino ribs, double indirect (with slo roller). It’s been a 9hr cook so far. At 170f (internal) I wasn’t sure so I wrapped it in a foil boat. Maybe I shouldn’t have since it has big bones underneath.
Are you guys able to make sense of this?

Your temp has to be way too low. What temp are you trying to cook at?
