No, with mother Graziella and her. Let’s clarify. No, I’m the boss. So, this evening… for this evening we have organized an aperitif. It’s halfway between an aperitif and dinner, it’s like brunch, but for the evening and we’ve invited some cousins, the family and now we have to prepare food. What will we do? What will be on the menu? There are baked vegetables, there is rice salad, there is pasta with Bolognese sauce, there is really everything and more, fruit, fruit salad… Truly a lot of things , so… We have to buy ice cream. The melon with sliced ​​meat. Oh well you’ll see why we show you now how we prepare some things, since the last video of cooking with mom was a great success, so… Everyone loves it, let’s do it. First we will start with the baked vegetables. The first things to do are the carrots and potatoes, which we must boil lightly for 5 minutes so that they soften. So I’ve already put the water to boil and then now I peel the carrots and potatoes and put them in the water. Obviously they, as always, are there waiting. They spend their days waiting, all their videos are always there waiting. It seems like we’re starving you. Ok now I’ll start cutting the courgettes into rounds and then placing them in this baking pan. I prepared an emulsion of extra virgin olive oil, salt, pepper, I also added a little paprika because I like it and oregano. Then I’ll put fresh parsley on top. Ah yes, if you want a drop of lemon, if you like. With this, brush the bottom of the pan with some baking paper, which I have wetted so it fits better in the pan. Brush because you will then have to place the vegetable slices on top, so they must not stick. Now put all the vegetables in this order, placed neatly because aesthetically it must also be a beautiful dish. So, let’s start with the courgettes because we’ve cut those up for now. Now we have made a layer of red peppers, now let’s make a layer of aubergine, like this. Overlapping them, but not too much because otherwise the bottom part won’t cook. Ok this is the first tray, so we have: potatoes, carrots, courgettes, yellow peppers and tomatoes, aubergine, red peppers and courgettes again. And over here we have a second tray because we realized that we didn’t have any more space and we also have the fennel and… nothing. We already had the rest over there. Now we put this emulsion on top to cover everything and also a little breadcrumbs so it remains a little crunchier. Here, now I’ve covered the two trays with cling film, because we’ll put them in the fridge now and cook them later, when it’s almost time for dinner, because they’ll go into the oven at 180° for about 20 minutes, so they can wait until tonight. Ok now let’s start preparing the second dish, which is the rice salad. Rice salad is a dish par excellence in Italy, because it is very typical, that is, many people make it, especially in summer, because in summer it is very hot and even eating is a great effort, especially eating hot dishes, so prepare a large bowl of rice salad, which is simply cold rice with various vegetables of your choice and you can eat it for 3 days too, so it’s perfect. And now we’ll show you how we prepare it, what our version of rice salad is like. The water boils, so here’s a little trick: throw a little oil into the water, so that the rice doesn’t stick. Then the rice. What kind of rice do we have? Oh, I’m originally from Verona and for me Verona is the center of the world for rice and so I only eat that. You certainly won’t have rice from Verona, from the Veronese countryside, so use the rice you have. Everyone has what they have at home, so… Perfect, so we cook it and leave it there and in the meantime… Slightly… Sorry. Slightly al dente you need to drain it. Yes. Ok and when it’s drained, add a drizzle of oil, do not put it under cold water, because it loses the starch and that is its good, so spread it well in a baking dish, lightly add a drizzle of oil, turn it gently and then spread it in a baking dish and then proceed, which then we will show you the ingredients we put. So in the meantime I have cut all the ingredients, let’s say, that we will add to our rice salad. As I said, these are free, so see for yourself what you want, what you like. A lot of people use pickled things, which I don’t like at all, so we don’t use them, but if you like them… We have here some cut cucumbers, some cut cucumber, some chickpeas, some red beans, some cooked eggs, corn, this is some diced cooked ham, green and black olives and some peas. We have prepared two trays and we have the rice that we had already cooked and now we put everything together. We’re putting some oil on the bottom, then we’re adding the rice and then the ingredients. I would say that as a rule it is important that the ingredients are cut small and try to make the right amount of half rice and half ingredients, so the flavor is more balanced. The first layer of rice. And then add the ingredients one by one, in short. Ok we have finished the first layer and now let’s add some rice and continue to make the layers. Actually, we got the measurements wrong, so we don’t need the second pan and we have this first pan. Now let’s finish the last ingredients and here it is. This is a guaranteed success. Finally, we add another drizzle of oil to wet everything a little. And finally we have here a beautiful fruit salad with all the fruit you want. I also see some avocado which… I didn’t make it, so it will be interesting to try it with avocado. Here you go, everything is ready. We have a tray of salami and parmesan cheese, focaccia and many other things. Everything smells great. It smells to die for. And finally, of course, the cake. My cousin made a delicious cake with strawberries, so now we eat it, we enjoy it. Bye see you soon!
