Ejjeh (herby Lebanese egg pancake) with leftover kousa (zucchini cores), with homemade labneh. JUST Egg worked wonderfully here.

Something we used to eat quite often growing up. Also the Labneh wasn’t fully done but I was making this regardless because it’s delicious, even with no pita either…
