hi I’m Robin from cooking Mexican recipes calm and today I’m making beans rice and cheese burritos now this recipe is a starting point or a launching pad as I like to call it for more elaborate burritos you can add margarita shrimp to this recipe you can add chalupa pork to it chicken necks can be if I have a lot of recipes on my site you can add to it to really bring this forward with this recipe I’m going to go over the basics with you and we’re going to talk about flour tortillas and we’re going to talk about how to make the beans and put it all together and possibly even we’ll talk about how to freeze them now my kids really love these burritos just basic beans rice and cheese and so I’ll make this for dinner I might add some chicken or I might tonight I’m going to make some Mexican beef and we’ll make our burritos and then what’s left over then I’ll take and create these burritos and I’ll wrap them in saran wrap and foil and I’ll put them in a ziploc bag and I’ll freeze them so that way my kids will have a nice meal snack any time they want they pull them out of the freezer and they throw them in the microwave and they have a nice meal so they have a good burrito you’ve got to start with a good tortilla now I have a recipe on my website to make flour tortillas from scratch so you can check that out if you have time if you don’t and let’s say you just want to buy your tortilla I’ve got a couple of suggestions for you Costco sells tortilla and it says it’s tortilla Land tortillas and these are uncooked tortillas and they’re already shaped and formed for you and all you do is throw it on a pan and you heat it up now the next selection that I have for you is from Trader Joe’s so if you have a Trader Joe’s near you you might want to check these out these are called truly handmade flour tortillas they’re a little thicker let me show you one of these they’re a little bit thicker than the Costco tortilla and they’re unusually shaped they’re not perfect which kind of shows you that they are handmade and I like these because they have a little more substance to them and they work really well for any burrito they go over how to make your beans we’re going to cook these from scratch I know if you don’t have time you might want to just use canned cooking beans from scratch is going to take about almost four hours I’ve got two cups of pinto beans here and what you want to do is we’re going to clean them we’re going to just kind of sort through them really and remove any rocks or any unusual looking beans just spread a minute like this into my colander now I’m going to just rinse these out now I’m going to fill the pan up with some water and I want to cover the beans about two inches high over the beans because they’re going to add the water is going to cook down and I’ll probably add more water as it goes so we’ll just have to wait and see how that turns out I’m going to put these on the stove I’m going to start out with high heat because I want to bring these to a boil as soon as possible then after it comes to a boil I’m going to turn it down and I still want to boil but I want it to be more of a simmer so for our recipe I’ve got two cups of dry beans now I’m going to add some I’ve got some vegetable oil I’ve got about two thirds of a cup now one thing I want to mention about your oil I first of all I don’t like to use lard because it’s not very healthy for you but so I use vegetable oil and you also want to make sure that you always check your vegetable oil to make sure that it’s fresh there’s nothing worse than adding some you know old vegetable oil that you’ve had in your pantry for six months and you go and you use it and it’s rancid and it’ll mess up your whole recipe so smell it that’s the best way to tell and I’m going to add some I’ve got a couple of teaspoons of salt and I’ve got a tomato that I diced up right here and I got a bay leaf and I have some I actually purchased some roasted garlic already roasted in a jar and I thought I would try that today and I got a couple teaspoons of that so I’m going to go ahead and add my oil salt my garlic this nice roasted garlic will get it some really good flavor and I’ve got my this is one tomato diced up bay leaf one bay leaf stir all that in but now that I have all my ingredients in the pot I’m going to bring this to a boil flame get it to a nice boil and once it boils then I’m going to turn it back down and I’m going to simmer it for a good hour and a half the longer the better that way all the spices can milled and really bring out some really good flavor okay our beings have been simmering now for about an hour and a half and I want you to have a look and see how thick they’ve gotten since that time I’ve added very little water and before I mash them I want to take out the bay leaf which is right here take that out and see how nice and thick they are and their dark brown that’s that’s the color we want that’s where we get the most flavor and have my Nasir here so now I’m going to mash them to the desired consistency so now that we have our beans done I’ve got them right here nice and hot I want to just show you some of the ingredients I have to put in our burritos and you know I have the basics the beans the rice and the cheese which is what we talked about but I have a few other ingredients that I whipped up so that we could put some of these in there too okay so here I have my beans and I’ve got some grated mild cheddar cheese and I have some lettuce now burritos the best kind of led us to put your burritos would be either iceberg lettuce or romaine anything else very limp green type lettuce doesn’t work very well because it just doesn’t hold up it needs to have certain amount of water in it I also have some sour cream and I have some hot sauce and I whipped up some fresh guacamole so I have that over here and I placed a piece of plastic on it because I made this a couple hours ago and I’m what I wanted to show you was is that if you put the plastic on there it helps keep the air out and so your guacamole won’t turn black as easily and then I cooked up some Spanish rice I have a video on my website for how to make that as well so I didn’t show that today but I actually froze this rice and I just reheated it for this recipe and it works it freezes really well now the last thing I want to talk about is this is my own little concoction is a apple cider vinegar dressing and I like in my burritos I like to add that with my lettuce and roll it all up the flavors really go well together and I really just love it so I want to talk a little bit about heating up the tortillas now there’s an number of ways in which to do that now for the obviously for the one from Costco we’re going to have to cook it in the pan and I thought I would show you that real quick I have my cast iron pan here heated up over medium high heat it’s pretty warm so just throw it in let it cook and see here that the tortilla is starting to bubble so I’m going to turn it over and see the nice little brown spots you just want to get a few brown spots it’s good to go so your second option to heating up your flour tortillas is one of these little things this is called a tortilla oven and what it is it’s got a little sleeve little pocket here and what you do is you stick you can put a dozen flour tortillas in there and stick it in the microwave for about one minute and they come out nice and moist and hot and they stay hot for like an hour another option is to take a flour tortilla take one of these and just put it in the microwave I’ve done that many times just stick it on a plate and heat it up for 20 or 30 seconds it’s important to heat up your tortilla so that it’s nice and soft and pliable before you put your beans and rice and all your other goodies inside your burrito that way when you fold it it doesn’t crack and tear and fall apart on it so let’s start with just your basic beans rice and cheese burrito that’s what I’m put together here for you so I’m going to take some beans and put a scoop now what I want to do here is I want to keep the beans about a couple inches from one end so that I can fold that end up all right so I got my beans there and the others you can come all the way up to the end here and I’m going to add a scoop of rice and I’m going to spread that rice all the way across the burrito so that there’s rice in every bite that’s one of my pet peeves if you will about burritos but I like to see all the ingredients spread across the whole burrito so that every bite has a little bit of everything so there you go now what I’m going to do is I’m going to fold the this end up and I’m going to bring the other over and tuck it and roll and there you go I’m gonna let it sit there now I’m going to show you how I make my favorite burrito put some beans on first add some rice a little bit of cheese not too much and some lettuce I kept them in a lettuce in there and I want to add this dressing which I absolutely love this is the apple cider vinegar dressing I like to add some right on top and I’ll finish it off with a little guacamole all the way across hold that over there you go okay so I’ve got a couple of burritos made up here for my kids and with both ends wrapped in because that’s how they like them now after I do this with the foil of course I’m going to stick them in open the ziplock bag and these will keep it’ll keep for you know a couple months in the freezer stop by cooking Mexican recipes calm and you’ll find more recipes there that I printed out your bean recipe four years ago and thankfully I've found your YouTube site. We are military and sometimes we are not able to get decent mexican food. You have no idea how thankful I am that you do what you do. I am Cali and you have made it so that I am able to have the foods that I am used to no matter where we are living.

Can I substitute with black beans instead of pinto? Or would it be best to use pinto?
In my opinion, refried pinto beans is best. However, you could use black beans. I would assume you meant whole black beans and not try to refry them? Many Mexican restaurants us whole black beans and it's fine. Your burrito will be "drier" when you use whole beans. You can help that by adding other ingredients like sour cream, guacamole etc. Hopes this helps. Don't hesitate to ask more questions!

I don't like to use olive oil especially in refried beans because it has too much flavor and will change the way the beans taste.

Putting beans in a crockpot on low all day is an easy shortcut way to use dried beans when you're short on time at dinner.

Hi, soaking the beans in boiling water for 30mins and cooking them in a pressure cooker for a few mins saves a fair amount of time. Though I prefer soaking them overnight, soaking for 30mins in boiling water does the job.
eating black bean burritos and brown rice watching this
Are these frozen burritos ok to have cold? I'm just asking because I need a mobile snack solution for a place that doesn't have a microwave. I made some frozen burritos just yesterday with canned beans, bismati rice and shredded chicken breast. I was hoping when I try my second attempt at burrito making this friday I'd change it up a bit. Try to get some beans that are more spicy. Maybe add some cheese. At the shop I go to canned beans are cheaper/ more convenient. I would use a crock pot to cook beans if I can find the uncooked ones cheaper somewhere, which is good because I use a crock pot to cook the chicken breast and then blitz it in a blender and mix it up with the rice. I cook the rice in the crock pot as well. I'm too scared to use the stove. I don't want to burn the house down again.

We love Bean and rice burritos and we do use the Tortilla Land brand of uncooked flour tortillas that we buy at Safeway. We live too far from Costco 🙁 I've put cheese & guac in burritos lots of times but never did the lettuce and dressing before. Do you have a recipe for the Cider Vinegar one you love? Or can you tell me what brand if it's store bought? Thank you!

Bravo, Robin, for celebrating the humble but sublime and elemental bean, rice and cheese burrito! The best burrito I ever had in my life was a pinto bean, plain white rice and white cheese burrito accented with cilantro and chopped white onion that I bought from a "roach coach" food truck in an industrial park in the San Fernando Valley in the 1990s. It was all wrapped up in foil, was piping hot, was super fresh and was sooooooo delicious. It literally spoiled me for every other burrito I'd ever have thereafter – even an elaborate multi-meat Mission-style burrito smothered in green chile and broiled-over with cheese and buried in lettuce, tomato, onion, chili, sour cream and guacamole. Viva frijoles, arroz y queso!
