hey y’all i’m mandy and this is mandy in the making today i’m going to be sharing with you three really easy casseroles all using rotisserie chicken these are quick these are easy and they’re going to be crowd pleasers [Music] the first one i’m going to be making is a chicken dorito casserole simple ingredients probably that you already have on hand and then you’ll just need some cooked chicken whether that’s rotisserie chicken or if you cook it yourself and shred it to get started i’m going to preheat my oven to 350 and then i also need to crush up my doritos the recipe calls for a 10 ounce bag my grocery store only had the family size or the party size bag so i’m not going to crush up all of it i’m going to transfer some of it over into a gallon ziploc bag i need to drain and rinse these black beans let’s mix together everything that goes in our casserole we’re going to start with one cup of sour cream a can of cream of chicken soup and a pack of taco seasoning mix or two tablespoons of some that you’ve made yourself i need to make some more we just recently ran out so i had to grab just this before i could make my homemade recipe again let’s mix all of that together now i’m going to add in my rotisserie chicken it calls for about a pound of it my drained and rinsed black beans a can of rotel i did drain this first and about a cup of corn i’m using frozen corn but you could definitely use canned corn just drain it really well we’re gonna mix all of that together [Music] to the bottom of my casserole dish i’m going to add some of the crushed doritos now i’m going to take my mixture and spread it on top of our doritos lastly i’m going to take some pepper jack cheese and sure and put it all over top i was going to do cheddar cheese but since our doritos are cheddar flavored i thought i would do something a little different and lastly we’re just going to add a final little bit of our crushed doritos and that’s it our oven is ready for us it’s at 350 degrees this is just going to go in for 20 minutes [Music] so while our casserole is in the oven i wanted to tell you really quickly about thrive market they are very kindly sponsoring today’s video have now let’s get back to cooking [Music] he added a little bit of salsa verde to his just because because we got to have a party up in here it’s party time party time at the flavor factory oh man this is what i’m talking about right here crunch of the chip cheesiness i mean it’s like cheesy yes southwest flavors coming through the spiciness there on the salsa verde which is a nice touch so we like all right so this is delicious very very good somebody got seconds somebody else got seconds and just in case you were wondering this is sweet tea cole just does not put ice in his teeth i put ice in mine he does not i’m drinking black crux lacroix i mean lacroix oh my gosh let’s move on to casserole number two we’ve got two more left obviously but i’m gonna save the best for last i say it’s the best but it’s the one i’m most excited about but this one sounds really good too and more than likely you have most of these ingredients already on hand this casserole using rotisserie chicken is a chicken and hash brown casserole so it’s time to preheat our oven i’m going to set it to 350. let’s combine everything together i’ve got a can of cream of mushroom soup two cups of sour cream a half a cup of milk and the recipe calls for salt and pepper i may add a little extra pepper but i’m going to mainly go with this anti-no-no’s everything seasoning just because it has some other flavors in there that we really enjoy as well as the salt and pepper and let’s just mix all of this together before we add everything else [Music] i love that for me okay let’s try that again i’m adding in just a couple of cups of shredded chicken or chopped chicken already cooked a couple of cups of cheese i chose to do half shredded or half shredded half cheddar and half pepper jack just to give it a little extra kick you can do whatever cheese you would like let’s go ahead and stir that and now let’s add in our hash browns i’m not going to use our entire bag of hash browns just because it’s a little too much you probably want about 20 ounces of the frozen hash browns you definitely want a large bowl this is pretty much full okay that is all incorporated let’s put this in our 9 by 13 pan i do want to lightly grease my dish it’s going to use this thrive market olive oil spray that i love just going to spread this out evenly and then we’re going to top it with our ritz crackers you could definitely use ritz crackers you could use a combination of ritz and cheez-its i got that little hack from my friend amber over at amber at home she does that on her broccoli casserole and that’s such a smart idea so if you’re wanting some extra cheesiness on the top you could definitely crush up some cheez-its or if you don’t want to do either of those you could always crush up some corn flakes and put those on top too this is about two sleeves of ritz crackers lastly i just need to melt about three to four tablespoons of butter and we’ll pour that over top okay this is going in the oven at 350 for about an hour [Music] this is gonna be good i can tell it’s comfort food yeah it screams copper food man look at that i know it’s good stuff hash brown chicken what’s in here cheese mmm [Music] oh yeah oh yes nice and hot too you got a little cracker crunch yeah cole are you a fan so we’re having this for lunch today oh yeah and this reminds me of something you would get like a cracker barrel or yes yeah it’s got good flavor whatever the uh the i guess the the sauce or whatever that’s in there it’s uh yep sour cream and cream of chicken oh yeah and i added anti no nose in there and some pepper yeah good flavor in that okay i love it goes goes very well together for sure okay well this is another great casserole idea if you’ve got a rotisserie chicken that you need to use up okay y’all we are really excited about this third chicken casserole i saved the best for last this is chicken bacon ranch mac and cheese casserole whoa so my son is not here tonight so i have cut this recipe down for just four servings so obviously if you are wanting to feed a larger crowd definitely double this one let’s go ahead and set the oven to 375. [Music] okay now that we’ve got the oven preheating i just need to boil my pasta i’m going to put some water on the stove and then we’re just going to be using half of this box since i’m only doing like half of the recipe size so about a half a pound of pasta this is large elbows i’ve got six slices of bacon here i’m gonna cut this into small pieces and we’re gonna cook this on the stove okay we’ve got this really large skillet with the deep sides heat it to about medium-high heat we’re going to add in all of our bacon and crisp that up just really quickly if you are not subscribed to my channel i would love for you to become part of my youtube family hit that red subscribe button like right now i boiled the pasta for about six and a half minutes i’m gonna drain it and add just a little bit of olive oil to it just so that it doesn’t stick together my husband knows how much i hate doing this part so he’s doing it for me but now that our bacon is done he’s just going to remove it we’re going to leave behind the fat because we’re going to use that in the next step but we’re just going to drain the bacon we’ll add that back in soon okay i’ve got about a cup and a half of chicken and i’ve got a little over a tablespoon of ranch powder we’re just going to toss this all together okay that is now heated through we’re just going to remove it to this bowl here [Music] i’m going to add in just a couple of tablespoons of unsalted butter let that melt down now i’m going to add in some minced garlic and we’re just going to let that saute for just like 30 seconds now i’ve got a tablespoon and a half of flour we’re going to add that in we’re going to stir this around to kind of form a paste [Music] now i’m adding in a cup of heavy cream and a cup of half and half you want to add it in slowly and you want to whisk as you go while you wait on this to thicken up you don’t want to just let it sit here you do want to whisk it pretty often this is going to take probably about five minutes okay it is starting to bubble and it’s starting to thicken i’m gonna give it another minute for this process i’ve got my skillet on about medium let’s add in a quarter cup of parmesan cheese a good handful i’ve got about a cup of mozzarella cheese we’re going to put in half of it now and then i’ve got about a half a cup maybe a little more of cheddar cheese we’ll put half of it in now as well [Music] let’s let that melt down oh my goodness this smells so good i went ahead and turned it off because it’s ready let’s add in our pasta our chicken and half of our bacon okay let’s go put this in the casserole dish before we put it in our casserole dish i’m going to add just a little bit of salt and pepper [Music] okay let’s top it with the rest of our cheese [Music] and lastly our bacon this is going to go in a 375 degree oven for 25 minutes [Music] [Music] [Music] [Music] i mean if this doesn’t get you excited you need to check your pulse i’m about to hop out of this chair i know celebration here we are very excited over here oh man this looks good the cheese is just packed up in there and then oh man that bacon wrench no wow that’s amazing is it that is really truly amazing what kind of comfort food are we talking about here man the ranch and the bacon is absolutely incredible you got the cheese there’s chicken in there too yeah the chicken actually more protein um just uh the creaminess of the sauce and the cheese together with the the noodles that is just crazy incredible well i am stoked to try this out so i’m not gonna wait any longer you’ve already had your cheese little girl some more and that’s it three great casseroles that you can use your rotisserie chicken with let me know in the comments which one do you plan on making first also i want to thank thrive market again for sponsoring today’s video don’t forget to go check them out in the description box if you use that link and join thrive today you’re going to save 40 percent on your first order and you’re going to get a free gift don’t forget if you haven’t already i’d love for you to join my youtube family hit that subscribe button before you go i’ll see you all on friday bye it’s time for what’s for dinner no it’s not it’s not time for what’s for dinner we’re not filming what’s for dinner we don’t do what’s for dinner it’s winter dinners well it’s not even that either this is a tuesday video yeah happy tuesday happy tuesday yeah large elbows largest i don’t know why that tickles me with large elbows large elbows you don’t have large elbows you have a small little girl you elbow some cheese mommy’s got it not dad there you go gracie do you approve of these three casseroles this week you

  1. Mandy I'm new here but what I've seen I Llike however you use so much chhes I'm lactose intolerant so do you have a few without cheese

  2. On the last one, that sauce you made is like "substitute" for a "cream of something" soup from a can. So for anyone who would want to, you could use a cream of cheddar soup. Although I like making my own – I control the ingredients.

  3. Chicken soup or mushroom it looks pretty yellow for mushroom but I done used mushroom we will see how it turns out😊
