Made with roasted peppers, tomatoes, and a medley of tasty ingredients, Lutenitsa is a versatile condiment that adds a burst of flavour to any meal.

**Lutenitsa Recipe:**
Ingredients (this is a double dose!):
– 8 kg red peppers
– 1.5 kg tomato passata
– 2 kg carrots
– 4 or 5 aubergines
– 300 ml olive oil
– Salt, black pepper, cumin, and parsley to taste
Instructions:
1. Roast the peppers and aubergines until tender.
2. Peel the peppers and remove the insides of the aubergines.
3. Chop the peppers and the carrots.
4. Blend the peppers, pour into a baking tray
5. Add the aubergine insides.
6. Blend the carrots with the passata, add to the tray.
7. Season with salt, black pepper, and cumin. Plus 300 ml olive oil.
8. Bake for 1.5 hours at 200 degrees Celsius, stirring every 15 minutes until the liquid is gone.
9. Once cooled, stir in fresh or dried parsley
10. Transfer the lutenitsa to jars.
11. Any jars you intend to keep for later should be boiled, to seal and thus preserve the lutenitsa. 12. Keep opened jars in the refrigerator.

lenit recipe authentic Bulgarian pepper tomato [Music] relish [Music] [Music] we’ll Begin by washing the obber jeans for this recipe use four or [Music] five next pierce the OB jeans ready for [Music] roasting [Music] they should be roasted for 1 hour at 200ยฐ [Music] C remove the insides of the OB jeans we’ll put a link in the description for a side dish you can use the O peels [Music] [Music] for [Music] next wash the peppers we are using 8 kg of red bell peppers but you can use any red peppers the peppers then need to have the stalks and seeds [Music] [Applause] removed [Music] [Music] [Music] we will now roast the peppers we are doing some in the oven and some in the air fryer to save [Music] time in the oven they should be roasted for 35 minutes at 200ยฐ [Music] C [Music] in the air fryer we used the roast setting for 9 minutes and turned them a few [Music] times whilst we continue we’ll roast some more of the peppers [Music] when the peppers have been roasted they should be put in a saucepan with a lid for about 30 minutes this helps to soften and loosen the [Music] peel the peppers can now be [Music] peeled [Music] the next ingredient is the carrots we are using 2 kg first they need to be [Music] washed [Music] [Music] top and tail the carrots [Music] now peel the carrots we will show you how to make use of the carrot peels in an upcoming video subscribe to our Channel and hit the notification Bell so you don’t miss [Music] [Music] it the peppers now need to be Blended be careful not to overload [Music] [Music] mode pour the Blended Peppers onto a large baking [Music] tray then add the obber [Music] jeans for this recipe you will need 1.5 kgs of tomato Pata add some Pata to the blender then add some of the carrots but not too [Music] many [Music] keep going until all the carrots have been blended with all of the [Music] Pata add the Blended carrots to the baking tray [Music] next season the mixture with salt black pepper and cumin to your taste plus 300 M of olive oil [Music] m [Music] bake for 1 and 1/2 hours at 200ยฐ C stir every 15 minutes until the liquid has [Music] gone finally allow to cool season with parsley and transfer into [Music] [Music] jars [Music] M delicious how about this tasty serving [Music] [Music] suggestion [Music] 3 [Music] the last thing you need to do is to put the jars that you intend to keep for later into cold water and bring to the boil if your pan isn’t big enough you can stand some of the jars upside down the important thing is to ensure that the lids are covered this seals the jars preserving the contents when the water starts boiling boil for 10 to 15 [Music] [Music] minutes
