Current load from last cook. Assuming for brisket I’m filling all the way to the top of the basket just to be safe and can always use the leftover for next cook?

    Just fill it! You won’t get through it all but you can guarantee you don’t need to refill mid cook

    Yes. Fill er up and use the rest on your next cook. I do it all the time. I even combine traditional charcoal and lump depending on my cook.

    A brisket on your first cook? Do you already have some kamado experience? Brisket is one of the more challenging cooks. I’d hate to see you have a bunch of problems with a big cook like that on your first go around. Ribs and pork butt are much easier and more forgiving, but chicken is even cheaper for working out the kinks.

    But if it’s too late, fill up that basket and jump in with both feet! Trial by fire (pun intended) and see what happens!
