I treated myself to some cotswold 12.8% protein flour a few days ago. I fed Boris (rye and white) and Bela (white only) and left them both out to fermabubble. However I absentmindedly shoved both lots of discard into the bowl I was going to make overnight oats in … which had Almond extract and honey in 🙈 so now I was in a tizz because I had bought a Morrison rotisserie chicken and was going to make some pittas to have with. Buuut I decided to go with a fruit Loaf instead. Now I'm a swirler. I make my breads with inclusions like a swiss roll for three reasons, I'm too lazy to mix everything evenly, I can use the same proofing stuff for savoury and sweet because there's no surface inclusions, and I don't have to wait for even more time after knocking the bejeezes out of my dough to create the afore mentioned even distribution of inclusions. Everything was going swimmingly, I laid out my dough onto a lightly floured board, raided my dry goods store mixed up a bunch of dried fruits and some weirdo candied fruits from Xmas (don't judge me, they were reduced in lakeland 😂) I decided to make up a binding paste of butter, flour, brown sugar, mixed spice and ground almonds with a bit of extract, got everything spread out, rolled up and go to my, MY baking cupboard and my proofing basket is missing… turns out my fabulous Wife had put it in the dishwasher, panicked when it came out and basically was a mess and binned it. Yeah … New one ordered, but I had this log of dough staring at me accusingly. So I chopped it up into gnarly slices and shoved it in a tray to bake. Have to say it smells awesome, I'm going to add some Almond icing and a few salted Almond chunks to it when it's cooled. But anyway, here's to new inventions, what is they say about eff ups? Lol.
