I think the broccoli is namiul and the rectangle one next to it is stir fried fish cakes but the triangle one with peppers almost looks like it’s thinly sliced radish. The shape of it is triangle and it’s refreshing, crunchy and savory and the pepper adds a little kick. I can’t find anything online. I’m thinking it may be slightly fermented as it’s served next to kimchi and kimchi radish.
Also sorry for spelling issues, I’m still new to cooking but we would love to recreate these.

    Probably pickled chayote, which looks similar to radish but is much crunchier and is usually pickled with peppers like here.

    It’s jang ah jji (장아찌). It’s like pickles but with soy sauce.

    Every restaurant have different recipe but they are water, sugar, soy sauce, vinegar 100ml each. One onion, 220g radish, and about 5 peppers. Dice up the vegetable. And in a pot, boil water, sugar, soy sauce until it bubbles up, add vinegar to that and once it bubbles up again pour it in container with diced up vegetables, and leave it in room temp for 1 day.
