Smoked Porchetta from last night

Cooked at 275 until 150 internal, took maybe 3.5 hours, then turned it up to 400 until 158, rested for 10 minutes.

Next time I'll be more aggressive with the high heat at the end to crisp the skin even more but still came out delicious.
