I always wondered how to make Gumbo. So, I decided to look it up. After browsing through various recipes, I settled on one that seemed perfect for me. Sure, every nook and cranny in Louisiana has its own take, but this version with smoked Portuguese sausage, organic chicken, and Old Bay shrimp was absolutely delicious!

    “Ultimate Cajun Gumbo Delight Recipe:

    Ingredients:
    – 1/2 cup flour
    – 1/2 cup oil
    – 1 pound Old Bay seasoned shrimp, peeled and deveined
    – 2 organic chicken breasts, diced
    – 1 cup sliced Portuguese smoked sausages
    – 3 stalks celery, diced
    – 4 cloves garlic, minced
    – 6 cups chicken broth
    – 1 cup sliced okra
    – 1 yellow onion, chopped
    – 1 yellow bell pepper, diced
    – 2 bay leaves
    – 1 teaspoon thyme
    – 1 teaspoon paprika
    – 1/2 teaspoon cayenne pepper
    – Salt and pepper to taste
    – 2 tablespoons Cajun seasoning mix
    – Cooked rice for serving
    – Chopped green onions or parsley for garnish

    Instructions:
    1. Preheat the oven to 400°F (200°C). Toss the Old Bay shrimp with a bit of olive oil, salt, pepper, and a tablespoon of Cajun seasoning mix. Roast in the oven for about 8-10 minutes until cooked through. Set aside.
    2. In a large pot, make a roux by heating oil over medium heat and gradually whisking in flour. Cook, stirring constantly, until the roux turns a deep brown color.
    3. Add diced chicken, Portuguese smoked sausages, celery, onion, bell pepper, okra and garlic to the pot. Cook until the chicken is browned and the vegetables are softened.
    4. Pour in the chicken broth and stir well to combine. Add in , bay leaves, thyme, paprika, cayenne pepper, salt, pepper, and the remaining Cajun seasoning mix.
    5. Bring the mixture to a simmer and let it cook for about 20-30 minutes, stirring occasionally.
    6. Add the roasted Old Bay shrimp on top and season it to your taste. Green onion or Parsley on top.
