Tried some new things this weekend, mixing 4 loaves at one time with some chilly weather.
2000g homestyle bread flour
200g whole wheat
46g salt
1350g water
420g active starter
Morning mixed up some starter
2pm: Mixed it all together right away,
Stretch and fold every 45min for 3 hours
Rise for about 5 hours
Shape and fold in extras
Put them in their baskets and let them chill on the counter for an hour.
Fridge overnight and bake
Tried a jalapeño and cheddar, didn’t mix the way I wanted
Made a blueberry cinnamon brown sugar loaf that turned out very nice
Very sandwichy and fluffy this go around
