Thick young starter fed organic rye – 65% hydration – 13,5% protein wheat flower. 7hr bulk fermentation with 2x folding. First one after 1 hour then second one after another hour. Preshape and let sit on counter for 1 hour then into basket overnight. 20min 230C with lid on then 25 lid off:) this is my 8th bread and the first im really satisfied with! Any tips or tricks welcomed:)
