Is there any way I can still use this? I once made a soup from this but the fact that this beet had no liquid inside it didn't go well. Should I throw it away?

It was in the jar in the room temperature and was fermenting for 2 weeks, it taste okay, but it's dry

I’d try drying or dehydrated them. Nothing to lose. I bet those small pieces turn out great!

Just thought, these would be good tossed in granola.

I wonder if you pressed them if you could dehydrate them to make beet chips!

Beet “pizza”! Beets as the sauce/feta/arugula on top. It’s really good! Use pizza dough or flatbread or whatever you want as a base.

Freeze in preportioned packs for blending into a smoothie with ginger. It’s so good together.
