Well it's been nearly a year since I bought the KJ Big Joe, and I finally drummed up the courage to give a brisket a crack. Tbh not sure what took me so long, maybe it was all the disasters I see here and on r/smoking 😜.

It was a 10hr overnight cook and according to my meater I didn't stall, so I didn't bother boating or wrapping when I got up in the morming. A couple of things to improve on, I failed to get a good smoke ring because I think I left too much fat cap on, and also not all my chunks burnt out at the bottom because I may have put a little too much charcoal in.

Anyway, the guests loved it and I'll be giving it another crack soon.

    Before I even read your comments I was going to ask what your wood chunk situation was. I knew because I’ve had briskets turn out almost identical.

    Still, it looks darn good. I’d say you did pretty well for a first attempt.
