If im buying peppers at the grocery store i dont try jalapeno or serrano anymore but Thai seem to always light me up and are pretty widely available.

    There’s always too much for me to use at once so I freeze them in a ziplock baggie and that seems to work great.

    Thai Chilis are great because they offer a great way to scale and measure heat. This really helps when cooking for other people.

    So when I ask my wife how hot she wants a dish, she can answer in a number that represents how many Thai Chilis go into the dish.

    It’s easy to grow them as they love sun…. Eat them fresh off the plant then bag and freeze at end of season. You can eat them green or red or orange… Now I want some….
