Finally got to break in my Joe. Did a bit of research but decided to mostly just go for it and learn.
Went with a pork butt (unfortunately only had boneless) slathered in some yellow mustard and patted with Burnt Finger Smoky KC rub. Tried to target 225, mostly failed at that, then wrapped around 160 internal and jumped up ambient to 350 to finish the cook.
The temps ran away from me fast and it was very hard to get them back down. For other first timers, I’d recommend very conservatively opening vents when you are within ~50 degrees F from your target.
So many things wrong and got a bit dry, but the pork still tastes delicious! I’ll be back for another go shortly!

Lol at the first time park booty thermometer save name. Overall looks hella good though. It’s crazy how we all can have vastly different experiences just from the slightest change. It’s fun, learning the art of smoking.
