Most important ingredient for that street style flavour is That "Lohe ki kadai" (wok) The veggies get their smoky flavour due to high flame roasting And its possible only in this type of Wok as it gets very hot very quick and heat passes easily thru it
Incase of heavy bottom cauldrons/kadhai Heat doesn't passes that easily and you wont be able to roast veggies that good
