    I used 80g starter, 250g water, 350g bread flour, 10g salt. Cooked at 210C covered for 20min then another 20min uncovered

    It looks great! Nice work. It might be a tiny bit under proofed but we’re splitting hairs here. That’s a nice loaf.

    Try extending bulk fermentation for an extra hour at most and see what happens!

    That big hole is probably air from shaping. Amazing oven spring. Looks delicious.
