100g starter, 375g water, 500g ap flour, 10g salt.
Combined, (rest 30 min., stretch n fold)x4, proof at room temp for about 16 hours, shaped and put in fridge for about 6 hrs, dutch oven preheated to 450 degrees because that's as hot as my oven got, scored and placed in dutch oven with a couple ice cubes, baked with lid on for 30 mins, reduced heat to 400, and then baked without lid for 20 min. Recipe called for 15 min without lid, but it wasn't very dark, so I gave it 5 extra min.
I'm very pleased with my first loaf, but is there anything I can improve? 😊
