Italian pork meatloaves with balsamic sauce , roasted vegetables and herbed ricotta. Delicious. Not sure if my husband loved it as much as I did because he’s not a huge ricotta fan.

Agreed! I loved it. The meat part was fine but the veggies over the ricotta was amazing.
