This is the recipe without the plantain chips cus they came up to 91 cals so I suggest a lower cal replacement for them!
So this is like a deconstructed sushi bowl on a bed of cauliflower rice.

  • cook moisture out of cauliflower rice in a pan, pat that shit dry and leave it to the side in a bowl whilst u cook up 150g prawns in a pan.

-whilst ur waiting for the prawns I suggest getting ur 50g edamame beans cooked and cutting up 50g your veggie of choice, mine was cucumber, as small as u desire.

  • Take shrimp off heat when cooked and leave them a moment whist u grab that bowl of cauli rice again, add as much of the rice vinegar (tho I don’t recommend very much cause it can be strong), soya sauce and teriyaki sauce to the rice as u would like, I suggest going light with all of these sauces incase they’re too strong

  • Add the 50g light cream cheese to the rice and mix thoroughly, base done!

  • Chop up ur shrimp as small as you desire as well as 50g of avocado.

Constructing bowl:

  • assemble rice in bowl so that the sides have more rice than the middle, so kind of like there’s a dent in the middle.
    -put edamame beans on the rice, to one side of the rice dent, then the cucumber and shrimp, all around the middle dent, leaving the avocado for the middle!
  • squirt some mayo and siracha in a lil pattern on the top for taste + aesthetic
    Additionally: crush some low cal crisps or just anything u know is crispy of choice for some good texture
