Had to cut off a sizeable portion of a stem this morning, it wasn’t that drastic but I’m curious if these will continue to ripen in a bag or if it’s to early for them to be off the plant? Thoughts?

Put them in a closed up paper bag for a little while?

Put them in a paper bag with an apple. Might take a few days but they should ripen

I put them in a paper bag with an apple and a banana, and it was a success!

As others said the paper bag trick does work. Another thing is fried green tomatoes!!!

Eventually yeah, though this would force my hand to make some fried green tomatoes.

Yes they will. If you have a more ripe one somewhere put it in the bag with them. Ripe tomato gives off a gas that ripen other fruits nearby.

I had some green tomatoes ripen just sitting on my counter. Took about 2 weeks or so

It’s best to leave them on the vine until you see a “blush” of colour. After that you are 100% guaranteed that they will ripen either in a bag with already ripe tomatoes or on the window sill. These still look very green but it’s worth trying to get them to ripen. If they don’t seem to ripen then make fried green tomatoes or a green tomato relish.
