2 cups Basmati rice
½ cup fresh dill
½ cup fresh parsley

1 medium lemon, about 2 tsp lemon zest, plus ½ lemon juiced

3 cups hot water
2-2½ lbs salmon fillet

I don’t know about you, but one pot meals give me life. Especially one pot meals that involve rice. So here’s what you’re going to do. You’re going to grab all the leftover herbs that are in your fridge and chop them up. Put them on top of some rice and a casserole dish add salt pepper water and lots of lemon zest. Give it a really good stir. Next we’re going to make a quick marinade with olive oil, a little more herbs honey, salt, garlic. Place a really beautiful piece fillet of salmon on top. Brush the marinade on. Cover it really tightly with foil and bake until tender and flaky.
