There seemed to be an under representation of smoked corned beef (… which makes it pastrami?) on here. Tried my hand at it for the first time today — will do again:

    Looks great! When corned beef is on sale around St Patrick’s day we buy a few for pastrami and a few for jerky. Corned beef jerky is pretty damn good.

    I’ve done it once. It was definitely the best pastrami I’ve ever had. Four people at 6 lbs of it at one sitting.
