hey hey hey welcome back guys my name’s Melanie if you’re new here and I am doing another what I eaten a day high protein style but with a Twist it’s going to be an extra fun video because I’m doing Pinterest inspired recipes so make sure you stick around right to the end so that you don’t miss any of these recipes because I’m telling you they all look to die for and I can’t wait to eat today and just so you know I intended on recording this video all day today however dinner will be filmed tomorrow because my Italian father invited my family over for dinner tonight and that is an invitation I simply cannot refuse he is the best cook so we’re just going to roll with it and just do dinner tomorrow night instead and of course I will be sharing all the protein in each recipe if you guys like okay guys let’s get cooking well Mornings in my house are usually pretty hectic and loud but this morning was a rare one because I only had one out of my four kids awake at this time which was kind of nice it made um this a little bit more enjoyable for me with the peace and quiet and I found this recipe which is a peach and cottage cheese toast on Pinterest and it had so many ingredients that I just love that I never would have thought to pair together so I have mint and peaches and then I’m going to be adding a little bit of spice and a little bit of sweetness and everything together just looks so good so I’m just going to chop everything up fresh mint um yummy ripe peaches and then on the side I’m going to just boil up some soft boiled eggs because I cannot have breakfast without having eggs you guys know me and I also have my usual sourdough bread which is homemade of course that I just store in the freezer so it’s ready to just pop in the toaster for my breakfast so I’m just going to toast those um slices of bread and then while the eggs are cooking and the toast is or the bread is toasting I’m going to take out the rest of the ingredients that I need so I have some chili flakes and some honey and then I’m also going to take out some butter because I cannot eat toast without a little bit of butter on top I don’t know about you guys but toast just has to have butter so I’m just going to lightly butter my sourdough bread and then to that I’m going to add 1/4 cup of cottage cheese and cottage cheese is such a great source of protein but I don’t usually enjoy cottage cheese on its own however this recipe has made me fall in love with cottage cheese again so you just add the fresh peaches on top of the cottage cheese and then lightly sprinkle it with the chili flakes and it’s not too spicy it just adds a little bit of spice and then I’m sprinkling some fresh mint leaves on top and then I’m also going to be adding some hemp hearts just a little bit sprinkle that on top as well and then some Sprouts which are so delicious and then this is the best part you just drizzle honey over the toast and all of these flavors together oh so so good and then I like to add an egg on the side for a little bit more protein in my breakfast and I’ll be linking all of these recipes in the description below if you guys would like to try them out yourself this was a 10 out of [Music] 10 well after breakfast I always have a hot cup of coffee and then I try to get my workouts done in the morning so that I have the rest of the day to enjoy with my kids and my workouts almost always consist of strength training that is the best method in my opinion if you want to change your body composition and you want to have a high metabolism and then after my workout I always have a postwork workout smoothie or shake and today I’m trying out this banana date smoothie and the first thing I’m going to do is just put some dates in hot water so that they soften up and they blend a little bit better and then I’m going to take a frozen banana and add it into my blender along with 1 tsp of quick oats and then I’m also going to be adding some peanut butter and I love a creamy drippy peanut butter so I’m just scooping in a tablespoon of that and then half a scoop of my whey isolate protein powder and also a scoop of collagen powder and then I’m going to add in a dash of cinnamon and the cinnamon with the bananas and the dates are so good together so I’m just going to add a cup of almond milk add in the softened dates and just be careful cuz they might be a little bit hot now I blend everything together until smooth and here is my high protein post-workout shake and it is delicious highly recommend so for lunch today I’m going to be making a cilantro lime chicken with a mango salsa and the recipe I found on Pinterest is actually served over a bed of rice but I decided to just serve it with lettuce and make it more of a salad instead so I actually prepared this last night and I just wanted to make a marinade for the chicken that it could sit in overnight that I could cook the next day and this was the marinade from the Pinterest recipe that I found and guys this is so delicious I love all of these flavors it tasted just bright and flavorful and delicious and was also very summery which I loved so I’m just mixing all of the marinade ingredients and if you want the exact recipe remember it will be linked in the description below and with this recipe you can marinate it even just a couple hours before cooking I just like to let it sit in that marinade overnight so it has extra time to absorb all of these delicious [Music] flavors okay so now we are back to current time and I am ready to prepare lunch so I’m just going to preheat my barbecue and while my barbecue is getting hot I’m going to prepare the mango salsa and I should note that it’s important to use fresh ripe mangoes unfortunately my mangoes weren’t quite ready yet so they were a little bit tough um so with that knowledge I actually decided to add fresh pineapple as well to this salsa and it worked so well I would actually recommend adding pineapple to this recipe because it just tasted so good so I just chopped up some fresh mango and then I’m going to chop up a little bit of Pineapple as well and all of these flavors are just so fresh and healthy and bright and beautiful and you just feel good eating it I’m also adding some chopped bell pepper I chose red for the color because I like lots of colors and I feel like if your food looks pretty you’re going to want to eat it and I’m also chopping up some avocado which is one of my favorite foods and just to note this recipe stores really well in the fridge for a few days because I was able to eat this 3 days after I made it and it was still just as good if not even better and I’m adding some hot jalapeno peppers but I’m going to keep these on the side because I was sharing this lunch with my kids and I did not want to kill my kids I’m also adding a little bit of red onion and I’m just going to combine everything in a bowl together I love cilantro so I chopped up quite a bit of cilantro to add as well but if you’re not a fan of cilantro you could always use mint instead or even fresh parsley would work just as well add lots of lime juice and then I’m also going to be adding a little bit of olive oil and a good dash of salt and the cumin wasn’t optional addition but I do recommend adding the cumin it worked really really nicely so here is the mango salsa and I’m just going to prepare the chicken now to go on the barbecue and the good thing about this recipe is once the chicken’s done and you put it on top of your salad the mango acts as a dressing so I just used all of the liquid that was part of the salsa and just put it on top of my lettuce and it did not need any more dressing it was full of flavor it was so yummy and delicious and I highly recommend this recipe and I do have my scale out so that I can measure out 100 G of chicken and I’m not the type of mom who prepares separate meals for all of my kids I believe that your kids should just learn to eat the way that you eat so I am also preparing the exact same lunch for my kids as [Music] well for dinner tonight I am making a zucchini lasagna with a ground turkey sauce and this recipe was really really good it did take a little bit of extra time to prepare because the recipe recommends putting the zucchini slices on a sheet pan and then putting it in the oven for a little while just to help it um roast before baking in the lasagna because zucchini is so full of liquid that if you were to just put it in raw it would probably turn out pretty soupy and I have to admit that even after roasting the zucchini beforehand my lasagna was a little bit liquidy but I didn’t mind I’m just going to prepare the turkey sauce now so I’m just adding some onion and bell pepper and garlic to a pot along with some olive oil and you just want to soften up the vegetables and then once all of the vegetables have softened up you add in the ground turkey and you just let it brown in the pan before adding the tomato sauce this recipe also called for a little bit of dried oregano so I added that to the pot as well and then I also chopped up some fresh basil and fresh parsley which added a really nice Flavor now I do recommend adding enough tomato paste so that your sauce looks nice and thick I didn’t add enough tomato paste so my sauce was a little bit too runny I think because after my lasagna baked it still had quite a bit of liquid so I do recommend making sure that your sauce is nice and thick now I’m going to be making the ricotta cheese mixture and this is my favorite part so I just grated up some fresh parmesan cheese and then I’m adding light ricotta cheese along with a whole egg and then some salt and pepper and you’re just going to stir it all together until it’s nice and smooth and [Music] combined and now I’m going to start the fun part which is layering everything in the baking pan so I just started out with the turkey sauce put a good layer on the bottom and then spread out the zucchini and then I put the ricotta mixture on top of that and then I had some lowfat mozzarella cheese so I just sprinkled that on top and then you’re going to continue layering with the zucchini and the sauce and the Ricotta and the cheese until it’s nice and [Music] full and once you’re ready to bake it I recommend just buttering the top or the bottom part of your foil so that when you cover it the cheese doesn’t stick to your foil because the melted cheese on top is the best part and you don’t want it to stick to the foil so here’s the finished lasagna and it was full of flavor it was so yummy and delicious it turned out a little bit um soupy so I ended up having to use bowls but that did not bother me at all it tasted so good and I would definitely make this again
