I took about 2 big handfuls of fresh spinach (let's call it 2 cups but I didn't measure) and 1 cup of liquid egg whites and ran them through the blender with a splash of plain unsweetened almond milk and a bit of salt and pepper. Depending on your perspective it might look like a vibrant, fresh green color, kind of like matcha tea, or it might call to mind a scene from The Exorcist. You decide.
Spray avocado oil in the pan, pour in the blended mixture, throw in the cherry tomatoes sliced in half, cover the pan until the eggs are almost set.
Lay one La Tortilla Factory 60 calorie flour tortilla on top. Spray some avocado oil on the tortilla and flip the whole thing over to cook the tortilla a bit. (It wasn't a clean flip as you can tell in the pics but that might have been my pan's fault.🤣)
Add 1 slice of mozzarella cheese and let it melt as the tortilla browns for a minute, then fold the whole thing in half. Super filling high protein meal (see details in photos). Now that I'm looking at it, I should have added some sliced carrots on the side of the plate for a nice color contrast and better presentation.
