I made tuna pasta salad for dinner last night and am eating the leftovers for lunch today! I added extra pickle to my bowl today for even more volume and also because i love pickles. This is actually my first time eating traditional pasta in quite awhile, but pasta salad is a pretty good way to volumize it. This could definitely be made way lower calorie with the carbe diem of fiber gourmet pasta, but I’m on a really tight budget rn and needed to start using up things that have been sitting around in my pantry, which includes lots of old boxes of pasta lol.
The recipe is very straightforward and all of the ingredients are in the 3rd and 4th slide-
Boil noodles and then drain and let cool
Combine yogurt and mayo in a bowl
Add all chopped ingredients such as the veggies and herbs, as well as the thawed peas to the pasta
Add half of the yogurt mayo mixture and combine, refrigerate for at least 30 mins, then add the rest of the mixture and serve.
I will note that this is a smaller serving since it’s just my lunch, my dinner serving was something like 418 grams for 436 calories.
