I’m really proud of what I was able to do with a limited calorie budget! Had I not included the bacon this could have been a little over 200 calories but the extra umami added so much flavor and went a long way!

  1. Boil an egg to add to your ramen. (6 min in boiling water then straight into an ice bath)

  2. Heat up the ramen broth on the stove on low so it’s ready to go when your other indigents are ready.

  3. Fry your enoki mushrooms, bok-choy, or any veggie up with the bacon in your avocado oil. Put aside.

  4. Rinse and fry your noodles in the same pan you used before for the bacon.

  5. Add your broth, noodles, veggies, bacon, and egg to your bowl.Then add kimchi.

  6. Drizzle chili oil and hoisin on top to taste.

SO FILLING~~~ I can’t even believe it!
