Grilled some ribeyes earlier and had some leftovers. (I know, right? What are the odds of that.)
Charred some sliced red onions in a pan. Sliced the steak thinly and heated in a pan, then put a slice of smoked cheddar and covered till it melted.
Toasted bun, black pepper, lettuce, tomato, salt, steak and cheese, onion, and some of this [pepper sauce I recently discovered](https://i.imgur.com/ThkfJI1.jpg). I’ve been putting it on everything lately. I wouldn’t say it’s *absolutely* better than other good hot sauces, but it’s different and definitely tasty.
ETA for hurricane is about 6 or 8 hours apparently. Wish me luck!
