today we’re making sweet potato and Black Bean Enchiladas first peel and dice two large sweet potatoes boil until tender then drain and mash mix mashed sweet potatoes with 1 can of black beans 1 teaspoon cumin 1 tpoon chili powder salt and pepper warm eight corn tortillas to make them pliable fill each tortilla with the sweet potato mixture roll up and place in a baking dish seams side down pour enchilada sauce over the rolled tortillas and top with shredded cheese if using cover with foil and bake at 375° F for 20 minutes remove foil and bake for an additional 10 minutes garnish with fresh cilantro before serving enjoy your delicious enchiladas
