Craving a Mouth-Watering Veggie Burger?

Here is a simple and easy recipe for ‘VEG BURGER’
It brings into the burger the unbridled fun of India. Tikki made of mixed veggies and potatoes perked with tongue-tickling spices makes a wonderful patty for The Great Veg Burger. Together with juicy veggie of your choice and of course cheese for exciting taste.

Ingredients

Oil – 3tbsp
Cumin – 1tsp
Ginger chopped – 1tsp
Green chilli chopped – 1tsp
Beans chopped – ½ cup
Carrots grated – ½ cup
Boiled & mashed potato – 1cup
Green peas – ½ cup
Salt – to taste
Turmeric – ¼ tsp
Coriander powder – 1½tsp
Cumin powder – ½ tsp
Chilli powder – 1tsp
Coriander chopped – handful
Garam masala – ½ tsp
Chaat masala – 1tsp
Bread crumbs – ½ cup (plus extra for coating)
Paneer grated(optional) – ½ cup
Cheese grated – ½ cup
Oil – for frying
For Batter
Flour (all purpose) – ½ cup
Salt – a generous pinch
Pepper powder – a pinch
Water – ¼ cup
Chilli & Mint Mayonnaise
Mayonnaise – ¼ cup + ¼ cup
Ketchup – 2tbsp
Chilli sauce (tabasco) – a dash

Mint chutney (very thick) – 3tbsp
For assembling
Burger buns – 2nos
Butter – 2tbsp
Mustard sauce – 1tbsp
Tomato slice – 2nos
Onion slice – 2nos
Tooth pick – 2no
Cheese slice – 2no
Salad leaf – 2no
Pickled gherkin – 2no
French fries or potato wedges – handful

We Indians love our food, masalas thats why even western food is made and sold like Indian food.today will make veg burger and in it will use veg tikki which will have cheese and chaat masala which means bit of western and bit of Indian. lets make nice juicy veg burger. for veg burger we need to make veg patty for veg patty add oil,cumin,chopped ginger,green chilly Into this will add fine chop beans and carrot. since carrot and beans have moisture so will cook them on high flame. its almost 3-4 minutes of cooking. now add boiled peas. Burger is traditionally a sandwich, which when introduced was only made with meat but now its available in veg thanks to Indians. we have literally introduced veg burger to the world after a quick stir will add into this for binding and taste boiled and mashed potato. give a quick mix for 3-4 minutes till its cooking let me tell you that at the end of the video in our extra shot segment will tell you that with mixture how you can make kofta curry. now add some coriander and grated paneer. now lets just mix this up again. after adding paneer you dont need to cook more this is done and let it cool down completely and spread it out which will cool down quickly. till the time mixture is cooling will make its 2 interesting dips. for this we need Mayonnaise into this will add ketchup and for some heat chilly sauce now lets just mix this up now will make mint dip again its very easy. will take mayonnaise and our coriander or mint chutney yum so patty mixture is cooled, both the dips are made now lets shape the patty. this is cheese which is an optional step and adding some bread crumbs to it just a little so that while frying it doesnt falls apart now lets just mix this now will take generous amount of helping give it a round shape like this, press it and tap it on the sides and now its made to a patty quite big quite generous. now lets move on to see size of the patty so whatever is the diameter of the burger bun patty should be slight small in size so here the patty is slight smaller than burger even if its coming out its perfectly fine no problem. now in order to coat crumbs on patty will make a slurry meaning paste from flour and water heres some flour,salt and water sufficient enough to make paste like a batter look thick and pouring thats what we need from here take this patty and dip it completely onto this coat bread crumbs completely, just pat it on the sides and gently press from the top here the patty will fry this in medium flame or you can shallow fry it in pan deep frying makes the sides get a crisp coating, color looks better, crunchy but you can always shallow fry it look at that nice,crisp crunchy veg patty is ready perfect nice and crunchy now only assembling of burger is left but before assembling lets see tips and tricks the burger buns specially the base often becomes soggy thats why its necessary to toast it properly also its necessary to keep one lettuce on bun so that most of the mositure is taken by it to keep burger in one place you can use toothpick so that it fall apart. another thing is you can coat the patty with crumb and deep freeze it which can last for 1-2 months. just thaw and fry them then its ready. all the elements of burger is ready now is the time to assemble the great veg burger lets do it first take the burger bun and slice it from the center on the base of it apply butter, now butter side down and then toast, gently press them just rotate it. nicely toasted brilliant and our the great veg burger done. this is ready and now lets move on to extra shots where will use the remaining mixture to make kofta curry amazing. take some mixture shape it round, coat it with slurry and then with some bread crumbs and now they will be deep fried. kofte is ready and then add these in hot curry and serve them. our kofta curry done
