I decided to try pickling a yellow onion instead of the usual red, and man is it tasty! Definitely a slightly different flavor. I’m inspired to try all the different varieties now, maybe even scallions and leeks.

    I do this often, though I add a lil food coloring cause I like the pink

    I prefer to pickle sweet yellows. What did you use for the pickling liquid?
