I’ve never been a huge chicken salad fan because I have had too many bad ones over the years. I always looked at it as one of those foods that “when it is bad, it is really bad, but when it is good, it is really good.

Croissant chicken salad sandwiches are one of my FAVORITES. I chop a little jalapeño into my chicken salad aometimes for a kick but it’s so fresh and tasty, especially during hot weather
