I used to do ribs on a kettle years ago and finally got a pellet grill. First attempt for Father's Day didn't go great… taste was fine but one rack was dry.

Trusted the grill temp more this round and kept em at 250 or close to it. Had a smoke tube with cherry wood chips and apple pellets from PitBoss.

I cut up the rib tips this time instead of leaving them in bigger pieces, and hit them with the same rub and put them in a pan under the ribs to catch drippings.

I put everything on around 1030am. Sprayed the ribs with apple juice and apple cider vinegar around 1pm and swapped the ribs around, and kept spritzing them every 40 minutes or so.

Hit the rib tips with some sauce srijnd 2:00pm and drained off some of the drippings – they were my snacks to "test doneness" all afternoon.

Served them up around 230p for an appetizer while people started showing up and hit the ribs with sauce… they were all gone before the ribs were done.

And pulled the ribs off when they were hitting 205 and bend test was showing good cracks. One rack came off maybe 30m before the other. Both ribs off around 330p.

Was eating around 4pm and while I could probably get them moister with a 321 variant – they were great without the wrapping/unwrapping and pulled off the bone clean how I love it.

The rub was just some left over pork butt rub I'd made and I through more brown sugar into it. No binder.
