If you don’t want to buy expensive meat replacements, red lentil tofu is an easy substitute for spam. You boil 2-3 cups of water, then soak red lentils in the water for 20 minutes, then blend completely smooth with any salt/seasonings you want. I assume for spam you would make it very salty and add some liquid smoke. Then you boil the mixture until very thick, about 5 minutes, then pour into a mould (ungreased is fine) and cool for about an hour. It can be eaten like that or fried to make it crispy.
