spices are likely already gracing your pantry extra virgin olive oil the base of our flavor a generous glug to start one large yellow onion finely chopped for sweetness and depth two celery stocks finely chopped adding a subtle Savory note two large carrots finely chopped for a touch of sweetness and color sea salt to taste enhancing the natural flavors four cloves of garlic minced infusing the soup with its pungent Aroma 1 taspo freshly ground black pepper for a gentle heat 1 tbsp ground turmeric blending its warm earthy notes 1 tbsp ground cumin adding a smoky complexity 1 teaspoon ground lentils rinsed adding a subtle sweetness and creaminess one 400 G can of chickpeas drained and rinsed for a Nutty flavor and protein 1 liter of vegetable or chicken stock forming the base of our soup half a cup long grain rice or broken vermicelli for added texture and hardiness lemon wedges for serving a final touch of brightness now that our ingredients are prepped and ready let’s start building the foundation of our flavorful harira grab a large pot the bigger the better and place it over medium heat drizzle in a generous amount of extra virgin olive oil allow it to Shimmer and then toss in the chopped onions celery and carrots season generously with salt and sauté for about 10 minutes stirring occasionally until the vegetables soften and turn translucent the aroma filling your kitchen the lentils and chickpeas if using vermicelli break it into smaller pieces and add it during the last last 15 minutes of cooking this ensures it doesn’t become mushy continue to simmer the soup for another 15 minutes or until the rice or vermicelli is cooked through remember to stir occasionally to prevent sticking taste and adjust the seasoning with salt pepper or a pinch of cayenne if needed
