I made pad Thai with tom kha mushrooms, chicken potato taco bowls, maple Dijon salmon with mashed potatoes and asparagus, and caramelized onion pasta with Brussel sprouts.

Does anyone have any advice on how to make meal prep day less of a nightmare? It takes 8 hours for two of us to shop and cook 40 meals 💀

    I make a ton of a few things and then try and use those in a few different meals. Ground beef can be pasta, tacos, sloppy Joe’s, a wrap of some sort. I’ll also do a rice for a week or pasta, salad etc…
