Oven roasted chicken breast with chimichurri and avocado.

Chimichurri
– 2 bunches Italian parsley
– 1 Tbsp dried oregano
– 2 Tbsp red wine vinegar
– 4 Tbsp olive oil
– 2 cloves minced garlic
– salt and pepper to taste

Instructions
– chop Italian parsley
– mix remaining ingredients
– refrigerate overnight

Chimichurri goes great with a lot of things!

    I would add some chopped fresh chilli to that chimichurri but that’s just me. Looks great!
