if you are looking for easy cold recipes for lunch during the summer when it is so hot this is the video for you hey y’all I’m Mandy and this is Mandy in the making long time no see I was off last week however I’m filming this on my off week am I ever truly off no but I didn’t post a video last week so hi hope you had a great week of the fourth and that you spent time outside if you can it’s really hot and with family and friends our first first lunch that I’m going to share with you today is a Caesar chicken salad wrap so we’re making a Caesar chicken salad we’re going to put it in a wrap you could put it on a croissant you could just eat it by itself however you want to do that you also could use a rotisserie chicken and if my grocery store would have had rotisserie chickens I would have gotten one but they didn’t because I went shopping early in the day so I am just going to throw a couple of chicken breasts in our air fryer the recipe calls for about a pound of chicken cooked and shredded I’m going to season my with this chicken rub by Jack Daniels we got this at maybe Ace Hardware and we’ve been loving it so I’m going to season this chicken with a little bit of this chicken rub this is really good on grilled chicken oh my goodness so so good we also used it on some wings that Steven smoked one time too and it’s really good so we’ve been enjoying that this summer okay let’s preheat our air fryer while my air fryer is preheating I’ve got this block of Parmesan cheese we need about a/4 cup of freshly grated Parmesan cheese hi I told you I was going to have something for you parmesan cheese to the cheese monster or to The Spectator our air fryer has preheated so I’m going to throw our chicken in I cook mine on 380 we’re going to try 12 minutes and just see while our chicken is cooking I’m going to prep our bell pepper I just need to dice this finely and then I also have a shallot sometimes my grocery store has these and sometimes they don’t this recipe calls for one finely diced as well I’m going to get my vegetable dicer and we’re going to use that going use this to dice my green pepper and my shallot that was way better than standing here and chopping all of that so we’re done I just took our chicken out of the air fryer these three pieces were fine at 12 minutes this one needed an additional 2 minutes cuz you see how thick it is on that one part um I just tested it with our little thermometer I’m going to let these rest before I chop them I don’t want all the juices to run out I’m going give this a couple of minutes and then we’ll chop them up okay it’s been resting for several minutes so you can completely just shred it or you you can do as I’m going to do which is just kind of cube it cut it into really small bite-sized pieces so I’m going to work on that now and then we’ll be ready to assemble I have let the chicken cool I did not want it to be hot or even really warm while I was making the salad so it has cooled for about 20 minutes okay to our chicken we’re going to add in all of our diced veggies so our green pepper and our shallot I’ve got the Olive Garden Caesar dressing I measured out about a half a cup of that we’re going to add that in in now I also measured out some duk’s mayo I measured out A3 of cup we’re going to add that in got our parmesan cheese about 1/4 cup add that in we need just a little bit of garlic powder not a lot maybe half a teaspoon and then the recipe calls for salt and pepper I feel like there’s plenty of salt within that parmesan and that Caesar dressing so I’m not adding extra salt but I will add a little bit of black pepper because I do like that oh my gosh that smells so good and looks so good I’ve got some ROM lettuce that I’ve already washed and dried let me grab our wraps and I will start to assemble so these are a little bit smaller wraps than I’ve had previously those other ones can just be a little too large I’m going to break up this lettuce just a little bit and add it here then I’m going to add our chicken salad how about some croutons cuz how do you have a Caesar salad without croutons you know trying to find some of the smaller ones in here cuz I feel like if you try to cut them in half they just Crush little crunch in there you know let roll this up he’ll come in and join us I may have filled it a little too full really I’m not shocked I’m used to the large one so it’s more like a caesar salad Taco yum because it’s smaller wraps and I filled it too full so Cesar salad Taco Bon up now look here you got to wait on me oh my goodness you got to wait on me oh good looks good all right I’m going tank it up he tried to wrap it I tried to wrap it it’s it’s pretty pitiful bowl is eating we just got a little lamb delicious on the fillings there didn’t we I told her I said I want it to be a fat wrap well she delivered great job all right I’m sorry thank you sweetheart for making this I do appreciate it and it looks delicious and smells delicious you know what else would be good in this what bacon yeah yeah do we not we don’t have bacon we do but it’s frozen so okay all right you ready uh-huh hang on you ready to Tink this up so we call this a a C are chicken salad yes this W Taco Taco Rish yeah Rish tank all right here we go M oh man Caesar dressing I love it mhm tastes just like a Cesar salad in a wrap it’s really good and I do agree bacon would be like it would be great very good very delicious different kind of wrap that we’ve had lately mhm Cole is really happy he’s already eaten his entire thing I know there’s a crouton in there this is going to sound weird but sometimes Caesar things can be too Caeser mhm this is not too Caeser do you know what I’m do have you ever had something that was a little too Caeser yeah no it’s got the perfect level of season ISM caesarism seaason love it okay so this is good this is the perfect ratio of the Mayo to Caesar dressing all the ingredients the bell pepper adds a nice little crunch in there too really love that this is excellent perfect lunch for summertime that is really good the chicken is tremendous yeah it’s got a lot of flavor lots of flavor just in the chicken itself yeah one or two right I said I’ve said this many times if I had more I’d give more I only have two for now thank you for cooking this this is really yeah thank you so much you’re welcome it was very easy quick and easy light lunch mhm very and delicious that chicken you made too you can just eat that by itself oh absolutely good all right we will see you for recipe number two tomorrow well for you right now it is now the next day and I’ve got a second lunch idea for you this one you do have to go over to your stove top for just a couple of minutes but the end result is a cooled salad pasta salad this is a creamy Greek talini pasta salad so you need about 24 oz of tortillini you could use frozen it doesn’t have to be just the refrigerated kind this is just the kind I grabbed I think this is a 20 oz bag so close enough so I’ve got a five cheese torini I’ve got this pot here that we are going to heat up and bring to a boil and then we’ll just boil that and that’s the only cooking we have to do so as far as dicing goes it doesn’t say you have to cut up your cherry tomatoes but mine are more like grape tomatoes they’re the larger ones so I’m going to cut them in half but also I need to wash this cucumber but we’re going to D this cucumber do you peel your cucumbers I do for some things but it’s very rare I don’t mind the skin on a cucumber especially when it’s really chopped like this but I want to know below do you always peel your cucumbers feel like that’s probably enough let’s see because it’s calling for a cup of diced cucumber yeah this is enough so I’ll save that cucumber I’m going to be making a cucumber is salad for my mom’s house for the 4th of July so I will save that to go in there of July is tomorrow by the way for me anyway okay there we go that’s done now we just need to boil our Tor to T torini I can say it can you torini I don’t know why that’s so hard for me to say moving on now that our water has come up to a bowl let’s add in our tortillini woo and splash yourself with the hot water good times good times these only have to boil for about 4 minutes so let’s set a timer it has been 4 minutes let’s drain these and the reason I’m draining them in the colander instead of using my little drainer attachment to here is we need to rinse these in cold water we really need these to cool down quickly so I’m just going to run them under cold water for just a few minutes okay now that these have cooled let’s add them to this large bowl and then we just need to add all of our ingredients that we have chopped up which I forgot to chop these we’ll do that in a second we’re going to add in a cup of the Cucumbers you need about a/ thir a cup of black olives I went ahead and drained this can we need about a half a cup of feta cheese I love me some feta then let’s chop these because I forgot to let’s go ahead and toss all of this together and now for my favorite part and you could definitely make this taziki how how else could I say it siki suiki Z the sauce you can make this on your own I have made a version of this before but we’re using the help of the grocery store this time we need about a cup of this dressing which is not quite this entire container so let’s just mix that around okay so this is done for now this needs to go in the fridge for about 30 minutes before you’re ready to eat so I’m going to cover this and stick this in the fridge what kind of salad we got here one them one them one them you did good I know uhhuh I can already tell get a little bit of everything on there a little bit of everything all right look at that oh your looks better than mine TK M mhm M yeah very different pasta salad than I’m used to these would be raviolis right is that ravioli torini torini I like it not ravioli where am I stinking I I don’t know but here’s what I think I think that particular dressing that I use is kind of on the dry side it’s not too dry but I’m used to more of a liquid in my pasta salad so maybe using a little bit more of the taziki and or putting some sour cream or more Greek yogurt in there I don’t know I really like this I mean it’s coated really well in the pasta it is coated really well got a good coat to it I think it just throws me off because it’s a thicker coating and it’s not as liquidy as a coating does that make sense but the flavor is great yeah I love the texture of the pasta mhm soft how about that okay it’s got that thick pasta text to it right M very tasty you got the feted cheese and the Chiki mhm you could definitely add grilled chicken to this to add a protein more of a protein Zig my Amazon Echo just said grilled chicken protein added to shopping list nobody nobody told you to do that Ziggy remove grilled chicken protein from shopping list I’ve picked off grilled chicken protein from your shopping [Music] okay moving on this is really good oh it’s really gone mhm mhm I like this a lot okay I’m of the opinion you don’t really need to change anything in it I think it just throws me off because pasta salads are usually more liquidy and this one is just different I think it’s just yeah they’re usually brighter because it’s more of a a citrus flavor to it right yeah but this is really good if you love to dressing dip whatever you’re going to love this one so good toiki siki ziki suiki I want to say s because there’s a t in front of it that’s why I say tziki no it’s not Kiki It’s s like like the SAR bomb has a TS a r but it’s not tar s okay thank you I’m my bad I I love okay we’ve got one more recipe that I’m about to make right now it’s going to be so good see you in a second for our third recipe we are making an egg salad I love a good egg salad but this one is an herbed avocado egg salad fresh herbs avocado eggs how can you go wrong I have already hard boiled three eggs I did that earlier in my egg cooker and now they have cooled I had them in an ice bath for quite some time so we need to peel and chop these okay so now I’m just to peel and chop these I always love using this tool here to do my chopping so I’ve got some parsley I need to chop some dill this is fresh deal got my avocado and then one rib of celery we just need to dice all of this let’s add our celery in with our eggs just going to chop this up and add it directly in with the eggs as well and then you need about 2 tablespoons each of both parsley and Dill now if you want to use dried that’s fine but you cut that way down let’s go ahead and mix this up and then we’re going to add in our wet ingredients we just need a couple of tablespoons of mayo just a little bit of Deon mustard about a teaspoon and then I’ve got a lemon here we only need about a tablespoon of lemon juice that’s going to add some good flavor but it’s also going to keep our avocado from turning so fast then let me grab some salt and pepper that’s pretty much it we’re just going to mix this together and I’m going to stick it in the fridge until our sourdough is ready to eat I’ve got some sourdough bread in the oven so when that’s ready we can put this on some sourdough and have us a good lunch you coming in here I am you got something for me oh look at that that looks amazing look at you look at you you look great too a thanks I like them short britches these are my inside the house shorts that I have on okay we ready yeah that looks great I love this bread too oh my goodness I thought you were about to take a bite Tink all right here we go has this got deal in it mhm wow he did not know that he wasn’t in here when I made it that is delicious fresh dill fresh dill fresh parsley this is like it’s so like cool and refreshing M I love that M celery in there too mhm w wow mhm it’s good thanks mhm that’s good this is not your typical egg salad no this is very light and bright yes got a little bit of lemon juice in there too I love this it’s like almost like a creamy consistency too you know that’s good stuff that’s good stuff really good all right so we had the what did we have yesterday what did I make yesterday oh the chicken Caesar salad yeah yes so we have that we have this put that on top then that one next and then the torini pasta that’s what I’m going to say m yeah that uh chicken Caesar salad wrap or whatever that was so good these are really good this is an egg this is not your typical egg salad the deal totally makes this like like just a completely different flavor um but it’s really good it’s very refreshing highly recommend mhm so there you go three more recipes that are great for I don't mind the cucumber skin, but I prefer to remove some using the citrus peeler from Pampered Chef. It creates ridges which makes for a nice presentation.

Thank you for sharing these recipes with us, they all look amazing!! It depends on what I am making if I peel my cucumber or not. I use the wrapped European ones and if I don't use it all I just wrap and put back in fridge. Sometimes just for the look I will take a peeler and go down the cucumber on four sides….that gives you a little of the dark green and light green color!
I only peel my cucumbers if they have the wax on them. I try to avoid those and get the English ones if they are available.

Cucumbers… my mom and her mom used to peel cucumbers but left a small strip of the skin between each peeled row… does that make sense? Lol there was like 5 strips of skin that were about 1/2 inch wide down the cucumber… they would also just score the skins with a fork. Not sure why one over the other honestly. For me personally, I peel them if they are not garden fresh or with thicker skinned cukes.
Mandy just got done watching the video of you Tabby with her decorating looks beautiful I do have a question the basket that is on your coffee table could please send me link for it love I have remotes scatter on end tables as well our coffee table and when you look for a certain one you cant seem to find them that basket is a jewel just right size I may end up getting two of them please help lol
